The measurements on this are approximate and are from memory, we do not have a written recipe to follow.


  • 4 to 5 medium potatoes
  • 2 eggs
  • 1 cup sliced beets (canned)
  • 1/2 cup chopped onions
  • 1/4 cup white vinegar
  • salt & pepper to tast


Boil potatoes and eggs. Quarter potatoes,add chopped eggs and beets. Saute' onions in 1 Tbsp. cooking oil, until wilted. Add onions to potato, egg, beet mixture. Then add salt & pepper. Add vinegar last and lightly toss all ingredients together.
