I assume you wish to avoid these ingredients because you are a vegetarian/vegan and you don't want pectin or gelitan included in the tart.

You can make a similar glaze by simmering fresh or dried fruit. Dried apricots can be simmered and strained through a narrow sieve with some of the cooking liquid to form a glazing mixture. Fresh strawberries or frozen berries can be cooked with cornstarch to the desired consistancy. You can also find jam that only uses "natural" pectins which are derived from fruit. These can be used in the traditional fashion.
