• 1/4 lb. Danish or Oregon blue cheese
  • 6 tbsp. heavy cream
  • 1 tsp. fresh lemon juice
  • 3 tbsp. mayonnaise
  • 2 tbsp. olive oil
  • Mashed garlic, to taste (optional)
  • 1/2 tsp. Worcestershire sauce
  • Tabasco sauce, to taste
  • Salt and freshly ground black pepper, to taste


Combine Blue cheese, cream, and lemon juice in the small bowl of a mixer. Let stand for 5 minutes. Beat until well blended. Add mayonnaise and blend well. Gradually beat in olive oil. Add garlic and season to taste with Worcestershire, Tabasco, salt and pepper. Add more lemon juice if desired. (authors say to serve it on Romaine lettuce, but I like it on any greens.
