Ingredients
- To make approximately 50 servings:
- 8-10lbs. crisp cabbage ,shredded
- 2 1/2 cups white vinegar
- 2 1/2 cups sugar
- 1 T. black pepper
- 2-3 Tbsps. salt
Directions
Shred cabbage and place it in ice water for an hour or so. Drain well, sprinkle with salt and pepper and chill again. Combine the vinegar and sugar, stirring until the sugar is dissolved. Pour over the cabbage and set aside to marinate. When ready to serve, lift the cabbage out of the dressing. Variations: Omit the vinegar and sugar dressing and use cooked salad dressing, or 1 qt. of mayonnaise. (I like Hellman's One-Step Coleslaw Dressing) To make cabbage combination omit 2 lbs. of the cabbage, add 1 lb. shredded carrots, 2 cups crushed pineapple. Or add 1 lb. diced apples and 2 cups chopped celery with a cooked salad dressing.
