You start the oven low and go high, contrary to all other recipes for pies. This is a very old french recipe that dates probably 200 years.
Ingredients
- 2cups of whole milk
- 3 large eggs
- 1/2 cup of white sugar
- Pinch of nutmeg
- egg white
- 1 pie crust
Directions
Heat the milk, not boiling, and let cool. Beat the eggs, add the sugar a little at a time. Add the lukewarm milk and nutmeg.
Spread the egg white on the pie crust. Bake 1 minute at 350F just to seal.. Add the mixture of eggs and cook at 350F for 15 minutes. Bring the oven to 450F while the pie is in and bake until the middle is firm.
