Ingredients
- 4 - 8" flour tortillas
- Nonstick cooking spray
- 1 c. chopped cooked chicken
- 1/2 c. thin red bell pepper strips
- 1/4 c. thin green bell pepper strips
- 1/2 c. shredded sharp cheddar cheese
- 1/2 c. Salsa
- 1 tbsp sliced green onions
Directions
Preheat oven to 450. Line 15 x 10 x 1" baking pan with foil. Spray both sides of each tortilla lightly with cooking spray. Place 2 tortillas on foil-lined pan. Sprinkle each with half the chicken, bell pepper strips and cheese. Top with remaining 2 tortillas. Bake at 450 for 3 to 5 minutes or until light brown and crisp. Cut into wedges; serve with salsa and green onions. Serves 2.
