Most Caesar salads have anchovies as an opptional addition. I just don't use them in mine.

Ingredients

  • 2 cloves garlic,crushed with garlic press
  • salt
  • 1 T French dijon or country style mustard
  • 2 egg yolks
  • 1 t worchestershire sauce
  • 1/2 cup oil
  • 1/4 cup lemon juice
  • vinegar to taste (Balsamic is good)
  • Parmesan cheese, fresh grated
  • croutons
  • 1 plastic bag full of broken romaine lettuce

Directions

Crush garlic in salad bowl. Add salt and continue to crush. Add mustard, egg yolks and worchestershire. Slowly pour in oil. Add lemon juice then vinegar and additional salt and pepper. Toss with romaine , croutons and cheese just before serving.
