No tomatoes, but I hope you like it. Serves 4.

Ingredients

  • 1/4 c. olive oil
  • 4 cloves garlic, peeled and finely chopped
  • 1 small hot red chili
  • 1/4 c. very finely chopped parsley
  • 1.4 c. freshly grated Parmesan cheese
  • 8 oz. angel hair pasta

Directions

Heat oil in small frying pan. Add garlic and whole chili; saute, stirring constantly, until garlic changes color; be careful not to burn garlic or it will taste bitter. Remove pan from heat, cover and keep warm. Cook pasta in boiling, salted water according to directions, drain. Discard chili, then toss pasta with garlic-flavored oil in heated serving dish. Sprinkle with parsley and grated cheese, and serve at once.
