The partial baking of this pie shell insures a crisp under crust.

Ingredients

  • 1 nine inch pie shell(unbaked)
  • 3 eggs or 6 yolks
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 2 cups scalded milk
  • 1 tsp. vanilla
  • 1/4 tsp. nutmeg(optional)

Directions

Build up a fluted rim on pie shell. Prick the crust and bake in a hot oven 500 degrees F. for 10 minutes. Remove it from the oven only long enough to fill it with the following custard.
Beat the eggs or yolks slightly. Add the sugar, salt, scalded milk and vanilla; stir well. Pour these ingredients into the partly baked pie shell. Sprinkle the top with nutmeg if desired.
Place the pie in a slow oven 325 degrees F. for about 30 minutes or until the custard is firm to the touch. Serve the pie plain or with fresh fruit.
