To lighten this will not give the same result, but try light butter or margarine and skim evaporated milk. You can also purchase a lighter grated cheese. I suggest you just eat something else!


  • 1/2 c. unsalted butter, softened
  • 1/2 c. heavy whipping cream
  • 1/2 c. freshly grated Parmesan cheese


Cream butter; gradually beat in cream. Blend in 1/2 c. cheese. Cover and refrigerate till needed. To use, bring to room temperature and toss with cooked fettuccine or pasta of your choice. Season with salt & pepper and serve with extra grated cheese.
