Cooked greens sometimes replace the rice in Hoppin' John because the green leaves look like paper money and the beans like coins.(For New Year's Day)

Ingredients

  • 1 cup coarsely chopped ham
  • 1 cup chopped onion, divided
  • 2 cloves garlic, minced
  • 1 Tbsp. vegetable oil
  • 3 cups hot cooked rice, cooked in chicken broth
  • 1 16 oz. can black-eyed peas, drained and rinsed
  • 1 tsp. hot pepper sauce
  • 1/2 tsp. cracked black pepper
  • 1/4 tsp. salt
  • 2 slices bacon
  • 4 cups finely shredded cabbage

Directions

In large saucepan, cook ham, 1/2 cup onion and garlic in oil until ham is lightly browned. Stir in rice, peas, pepper sauce, pepper and salt. Cook until thoroughly heated.

In a large skillet, cook bacon until crisp; remove bacon and set aside. Drain all but 1 tablespoon of drippings. Add cabbage and remaining 1/2 cup onion to skillet; stir fry until crisp-tender. Spoon onto large platter. Ladle rice mixture into center of cabbage; crumble bacon over top. Serve hot or at room temperature. Makes 6 servings .


Each serving: 274 calories, 6 g fat, 11 mg cholesterol.
