  • Crust:
  • 2cups of fine cracker crumbs
  • 1/4c chopped nuts (walnuts, hazelnuts)
  • 1/2tsp cinnamon
  • 1/2c butter, melted
  • Filling:
  • 3 eggs
  • 1c sugar
  • 1/4tsp salt
  • 2tsp vanilla
  • 1T lemon juice, zest of lemon
  • 16 oz cream cheese
  • 16 oz marscarpone cheese
  • 2 c ricotta
  • 1 c sour cream


Crust: Butter sides of 9" springfoam pan. Combine all ingredients and press it, going up sides of pan. Chill.
Filling: Beat 2 egg white till stiff. Set aside. Blend 3 yolks and 1 egg white with: sugar, salt, vanilla, lemon juice and zest beating well. Add bit by bit cream cheese, marscarpone, ricotta and sour cream, blending well. Fold in beaten egg white SLOWLY. Fill chill crusted pan. Bake in oven 400 degrees for first 10 minutes; lower to 350 degrees for 40 minutes or until just set.
