Country-style ribs — finger-length cuts from the loin — really benefit from long, slow smoking and a sweet basting sauce, as in this recipe. Serve any remaining sauce at the table.

Ingredients

  • Basting Sauce:
  • 1 can (6 oz) tomato paste
  • 1/2 cup packed brown sugar
  • 1/4 cup frozen orange juice concentrate, thawed
  • 1/4 cup amber liquid honey
  • 2 tbsp raspberry vinegar
  • 1 tbsp prepared mustard
  • 1 tbsp Worcestershire sauce
  • Kosher salt and freshly ground black pepper
  • 2 lbs country-style pork ribs
  • Peach or apricot nectar for spraying
  • Recommended wood: sugar maple

Directions

Prepare the basting sauce: In a small bowl, combine tomato paste, brown sugar, orange juice concentrate, honey, vinegar, mustard, Worcestershire sauce and salt and pepper to taste. Set aside.

Rinse ribs under cold running water and pat dry. Set aside.

Prepare a fire in your smoker.

Place ribs, meaty side up, directly on the smoker rack, add wood to the coals and close the lid. Smoke at 225°F to 250°F, spraying every 30 minutes with peach nectar, for 2 1/2 hours. Brush with basting sauce, close the lid and smoke, turning and brushing with sauce frequently, for 25 to 35 minutes, or until fork-tender.
