Ingredients

  • Anise Biscotti
  • 2 3/4 plus 2 T flour
  • 2 t baking powder
  • 1/4 t salt
  • 3 eggs
  • 3/4 c plus 2 T sugar
  • 1 t anise extract
  • 8 T unsalted butter, melted

Directions

Preheat oven to 375. Line baking sheet with parchment paper. Sift flour, baking powder and salt together in a small bowl. Set aside.
Using an electric mixer on medium speed, beat the eggs in a medium bowl until light and fluffy, about 30 seconds. Add sugar gradually, continuing to beat on medium speed until mixed, about 30 seconds. Add anise extract and melted butter and beat until blended, about 10 seconds.
With mixer on low speed, add flour mixture and mix only until blended, about 20 seconds, stopping the mixer once to scrape the bowl.
Divide dough in half. form into 2 logs, 12" long and 2 1/2 " wide. Bake until firm to touch, about 30 minutes. Remove from oven and lower temperature to 275. Allow logs to cool for about 10 minutes. Using a serrated knife, cut each log into 1/2" thick slices. Arrange slices, standing up, about 1/2" apart on baking sheet. Bake until throughly crisp and lightly golden, about 30 minutes. Let biscotti cool on baking sheets.
