Ingredients

  • 1 cup broccoli florets, coarsely chopped
  • 1/2 cup chopped sun-dried tomatoes
  • 1/3 cup shredded Cheddar cheese
  • 2 tbsp. mayonnaise
  • 1 tbsp. chopped fresh parsley
  • 1/4 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 6 to 8 slices white bread, crusts trimmed
  • 1/2 cup butter, melted
  • 2 tbsp. grated Parmesan cheese

Directions

1. In a medium saucepan cook broccoli in boiling salted water 4 minutes. Drain well. Rinse with cold water; drain.

2. In a medium bowl combine broccoli, tomatoes, Cheddar cheese, mayonnaise, parsley, salt and cayenne pepper. Set aside.

3. Use a rolling pin to flatten bread slices. Brush both sides of slices with butter, making sure edges are coated. Spread about 2 tablespoons (30 millilitres) broccoli mixture on each slice. Roll up, pressing along edge to seal. Secure with toothpicks. Sprinkle with Parmesan. Cover and refrigerate at least 1 hour.

4. Preheat oven to 350°F/180°C. Remove toothpicks. Diagonally slice rolls into 1-inch/2.5-centimetre pieces. On a baking sheet arrange slices, cut side up. Bake 10 to 12 minutes or until golden. Serve warm.
