• 36 freshly opened oysters on the half shell
  • 6 tbs. butter
  • 6 tbs. finely minced raw spinach
  • 3 tbs. minced onion
  • 3 tbs. minced parsley
  • 3 tbs. minced celery
  • 5 tbs. bread crumbs
  • Tabasco sauce
  • 1/2 tsp. Herbsaint
  • 1/2 tsp. salt


Melt butter in a sauce pan. Add all the rest of the indredients except the oysters. Cook, stirring constantly, for 15 minutes or until soft. Press through sieve of food mill. Cool. Place rock salt in pie tins. Set oysters on half shell on top and put a spoonful sauce on each oyster. Broil under medium heat until sauce begins to brown. Serve immediatly in the pie tins.

Serves 6.
