I've not had a failure with this....if there is any pie left the next day, the meringue is still nice and not watery.

Ingredients

  • 3 Egg whites
  • 6 Tablespoons sugar
  • 1 Tablespoon Cornstarch
  • 1/2 cup water
  • Vanilla

Directions

Cook the cornstarch in 1/2 cup water until thick and clear. Cool, but you don't have to have it cold.
Whip the whites and sugar, add the cooled cornstarch mixture, and whip until peaks form. Add vanilla. Spread evenly over pie, and bake at 400 degrees for 10 minutes. If it's a coconut cream, sprinkle coconut on top, and for chocolate, put some cocoa in a tea strainer, and sift over before it's baked.
