Ingredients

  • 2 1/2 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbls pumpkin pie spice
  • 2 eggs slightly beaten
  • 2 cups sugar
  • 1/2 cup oil
  • 1 cup solid pack pumpkin
  • 1 cup cranberries chopped (or whole canned)
  • chopped walnuts

Directions

Combine dry ingredients, mix well with wet, spoon batter into lined muffin tins. Bake at 350 degrees for approximately 20 minutes or until toothpick comes out clean.
