Ingredients

  • 1 egg, beaten
  • 1/3 cup milk
  • 1 1/2 cups flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup butter
  • Coarse salt, toasted sesame seed or poppy seed

Directions

In a small mixing bowl stir together beaten egg and milk. Set milk mixture aside. In a large mixing bowl, stir together flour, sugar, baking powder and the 1/2 teaspoon salt. Using a pastry blender, cut in the butter till the mixture resemble coarse crumbs. Make a well in the center of the flour mixture. Add the milk mixture all at once. Using a fork, stir till the mixture can be gathered into a ball.

Turn dough out onto a lightly floured surface. Knead dough by gently folding and pressing dough for 10 to 12 strokes or until dough is nearly smooth. Roll dough into a 9-inch square. Brush off excess flour. Fold dough into thirds to form a 9x3" rectangle. Repeat rolling into a 9-inch square and folding in thirds 3 more times. Divide dough in half.

Roll each half of the dough into a 12-inch square. Using a pastry wheel or sharp knife, cut dough into 1 1/2-inch squares, triangles or diamond shapes. Place on an ungreased baking sheet. Using the tines of a fork, prick crackers well. Lightly brush crackers with water. Sprinkle with coarse salt, sesame seed or poppy seed.

Bake in a 300 degree F oven for 20 to 25 minutes or till done. Remove the crackers from the baking sheet and cool on a wire rack. Makes about 96 crackers.
