Ingredients

  • 3 lbs. yams (sweet potatoes)
  • 1/4 tsp. white pepper
  • 1/4 cup butter
  • 3/4 cup milk
  • 16 whole marshmallows

Directions

Cook yams in salted (1 tsp.) boiling water to cover, about 25-30 minutes, until tender. Peel yams and mash with fork on wooden board; add salt and pepper. Preheat oven (350 F). Grease 2-1/4 qt. casserole. Heat butter with milk until rim of bubbles forms around edges of pan. Slowly pour hot milk and butter onto mashed yams beating at slow speed. Spoon yam mixture into prepared casserole. Place marshmallows 1/2 inch into yam mixture. Bake 35-40 mminutes or until top of marshmallows are golden brown.
