Ingredients

  • 1 (5 to 6 pound) pumpkin

Directions

Cut pumpkin in half crosswise; remove seets and set aside. Peel and cut pumpkin into 1" cubes; place in a shallow 2 qt. dish. Cover tightly with heavy-duty plastic wrap; fold back a small edge to allow steam to escape. Microwave on HI 20 to 25 minutes, giving dish a quarter-turn every 5 minutes. Mash pumpkin and use any traditional Pumpkin Pie recipe, substituting your cooked pumpkin for the canned variety. You may need to add a little extra seasoning. i.e cinnamon & ginger.
