You can experiment with this; maybe leave out the zucchini and put in some fresh, chopped spinach.


  • 1 (10 1/4-oz.) can condensed tomato soup
  • 1 1/4 cups beef broth
  • 1 tomato, peeled and coarsely chopped
  • 1/4 cup green bell pepper, diced
  • 1 small zucchini, diced
  • 1 teaspoon chopped fresh basil leaves


Combine all ingredients except basil in a medium saucepan. Bring to boil; lower heat, cover and simmer for 3 to 5 minutes. Stir in basil. Serve at once.

3 servings.
