Ingredients

  • 1 lb. Fresh, Raw Shrimp
  • 1/4 cup White Breadcrumbs (not seasoned)
  • 1 large Egg White, lightly beaten
  • 1 - 2 Tablespoons Cream or Milk
  • Salt and Pepper to Taste
  • Finely Minced Green Onions (Optional)
  • 2 Tablespoons Butter, melted over low heat, in fry-pan.

Directions

Peel, clean and finely mince shrimp (almost the consistency of ground). Combine with half of the crumbs, egg white, cream salt and pepper. (Add 1 Tablespoon finely minced green onions, if desired). shape into eight round 2" by 1/2" thick patties. Refrigerate completed shrimp cakes while working on remaining ones until all are made.

Dredge lightly in remaining crumbs and saute in butter for approximately two to three minutes per side. Be careful to not overcook!
