• 8 lamb chops, about 1 in. thick
  • 3 T. chopped fresh thyme or 2 t. dried
  • 1 T. lemon juice
  • 3 garlic cloves, minced
  • 3 T. olive oil
  • 2 t. salt
  • 1/2 t. ground black pepper


Put the lamb chops in a glass or ceramic dish. In a small, bowl, mix the other ingredients. Rub seasonings into both sides of the meat, cover with plastic and marinate for 1-2 hours at room temp. or up to 24 hours overnight in refrigerator. On a hot well-oiled grill, cook the lamb chops for about 15 minutes, turning once or twice, until browned on the outside and still a little pink inside.
