Ingredients

  • 1/2 cup stick butter, cubed, room temp.
  • 2 1/2 tablespoons granulated sugar
  • 1 beaten egg
  • 3/4 cup buttermilk
  • 1/4 cup club soda
  • 1 teaspoon salt
  • 5 cups Bisquick biscuit mix
  • (not the lite version of Bisquick)

Directions

Preheat the oven to 450 degrees. Using a fork or pastry blender, combine the butter, sugar, salt and Bisquick until small granules about the size of small peas form. Drop in the beaten egg. Pour in the buttermilk and club soda. Gently combine the ingredients with your hand until a soft dough forms. This should only take a few strokes. Don't overwork the dough or it will become tough. Scrap dough off of your hand and dust hand with some flour. On a lightly floured cutting board pat the dough flat to a 3/4 inch thickness. Cut out the biscuits with a round biscuit cutter or slice the dough using a straight down motion with a very sharp knife to cut biscuits into squares. Gather dough cuttings and gently pat back into a flat piece and cut remaining biscuits. Bake on a cookie sheet for 12 minutes, or until golden brown. You can have the edges of the biscuits touching for a softer edge to each biscuit.


Makes 14-18 biscuits. Serve warm with honey and butter.
