Ingredients

  • 1 lb. fresh spinach
  • 1 apple,unpeedled, cored & cut into thin wedges
  • 2 T. lemon juice
  • 3 green onions, sliced
  • 1 (2oz). pkg. sliced almonds, toasted
  • 2 slices bacon, cooked & crumbled (optional)
  • 1/3 C. vegetable oil
  • 1/3 C. red wine vinegar
  • 2-3 T. sugar
  • 3/4 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

Remove stems from spinach; wash leaves thoroughly & pat dry. Tear into bite-size pieces. Toss apple slices in lemon juice; drain. Combine spinach, apple, green onion, and almonds; toss with bacon, if desired.

Combine oil and remaining ingredients in a jar. Cover tightly & shake vigorously. Before serving pour dressing over salad mixture & toss.
