Ingredients

  • 6 tablespoons(3/4 stick) unsalted butter or margarine
  • 10 ounces miniature marshmallows
  • 6 cups crisped rice cereal
  • 2 cups butterscotch morsels
  • 1/4 cup milk
  • 1 cup honey-roasted peanuts

Directions

Butter a 13x9x2-inch baking pan and set aside.

Melt 4 tablespoons of the butter in a large saucepan. Add the marshmallows and cook over low heat until melted and smooth.

Off the heat, add the cereal, and stir to coat. Pat mixture into prepared pan. Set aside.

In another saucepan, melt the remaining butter and add the buterscotch morsels. Stir until soft, then add the milk, stirring until smooth. Mix in the peanuts and coat well. Pour evenly over the cereal and smooth top lightly.

Allow to set before cutting into squares.


Makes about 3 dozen.
