Ingredients
- 1 large lime
- 2 T. honey
- 1 T. olive oil
- 1 T. chopped fresh mint leaves
- 1/2 tsp. Dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. coarsley ground black pepper
- 2 bunches watercress (about 4oz. ea)
- tough stems removes
- 6 ripe medium peaches (about 2 lbs.)
- peeled & cut into wedges
- 1 medium jicama (about 1 1/4 lbs)
- peeled & cut into 1 1/2 "x1/4" sticks
Directions
Grate 1/4 tsp peel from lime & squeeze 2 T. juice. In small bowl, with wire whisk, mix lime peel, juice, honey, oil, mint, Dijon mustard, salt & pepper.
Just before serving toss watercress, jicama, and peaches with dressing.
