Ingredients

  • 1 large lime
  • 2 T. honey
  • 1 T. olive oil
  • 1 T. chopped fresh mint leaves
  • 1/2 tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. coarsley ground black pepper
  • 2 bunches watercress (about 4oz. ea)
  • tough stems removes
  • 6 ripe medium peaches (about 2 lbs.)
  • peeled & cut into wedges
  • 1 medium jicama (about 1 1/4 lbs)
  • peeled & cut into 1 1/2 "x1/4" sticks

Directions

Grate 1/4 tsp peel from lime & squeeze 2 T. juice. In small bowl, with wire whisk, mix lime peel, juice, honey, oil, mint, Dijon mustard, salt & pepper.

Just before serving toss watercress, jicama, and peaches with dressing.
