Note: today's hams, whether cooked or uncooked, must be handled like fresh meat and kept under refrigeration. Uncooked picnic or whole hams may be kept under refrigeration for two weeks; half hams, one week; cooked picnic or whole hams, one week; and ham slices, three days. Uncooked ham should not be frozen; however, cooked ham can be kept in the freezer for four to six weeks.

Ingredients

  • half or whole ham(5-8 lbs.)
  • whole cloves
  • prepared mustard
  • brown sugar
  • Note: Read the wrapper on all ham for specific directions. Picnic hams are prepared the same way. Thermometer reading should be 170 degrees F.

Directions

Score the ham with a sharp knife, making diagonal cuts 1/8 inch deep and 1 inch apart across the entire fatty surface of the ham. Repeat, making new lines across the first ones to form diamonds or squares. Insert a whole clove in each diamond or square. Rub surface with prepared mustard. Sprinkle lightly with brown sugar.

Bake in a preheated oven at 325 degrees F. suggested time for baking. ( A 6 lb. picnic shoulder ham will take about 3 1/2 hours; internal temperature 170 degrees F, well done.)
