• 3 cups flour
  • 1 cup mashed potatos
  • 1 cup water
  • 1 tsp dry yeast
  • 1 tsp coarse salt
  • 1/2 tsp table salt
  • extra virgin olive oil


Mix flour, mash potato and salt. Add yeast (reconstituted). Add remaining water. Knead until dough is smooth and not sticky. Place in a bowl and let rise until double. Punch the dough down and strech it onto a baking tray (you can grease the tray with olive oil. Instead I sprinkle flour on the bottom of the tray). Brush the focaccia with extra virgin olive oil and sprinkle with coarse salt. Let rise until double and light to the touch. Bake in a preheated oven (400 degree c.) until golden. Enjoy.
