Ingredients

  • 8 oz. cooked macaroni
  • 1/4 c. butter
  • 1/4 c. flour
  • 2 c. milk
  • 12 oz. cottage cheese
  • 1 1/2 c. shredded sharp Cheddar cheese
  • 1/2 tsp salt

Directions

Layer half of the macaroni in 2 quart casserole; top with 1/2 the cottage cheese and 1/2 the Cheddar cheese. Repeat, ending with Cheddar cheese.

While the macaroni is cooking prepare sauce: Melt butter in medium saucepan over medium heat, stir in flour and cook 1 minute. Add milk (all at once) stirring constantly until thickened and bubbly. Pour over casserole.

Bake @ 350 for 30 to 35 minutes. May be refrigerated overnight and if so, allow an extra 10 to 15 minutes baking time. (Not Luby's, but excellent!)
