Ingredients

  • 6 to 8 lg poatoes
  • 1 cup olive oil
  • 1 cup lemon juice
  • 2 cup chicken broth
  • 2 cloves garlic minced finely
  • 1 tsp oregano
  • salt and pepper to taste
  • paprika

Directions

Peel and quarter potatoes and place in baking pan. Mix remaining ingredients and pour over potatoes so that mixture comes up half way. It may be necessary to make more of this mixture. Sprinkle with paprika, Cover with foil. Bake at 350 degrees for about 1 1/2 hours or until potatoes are soft. Uncover and continue cooking at 400 degrees until potatoes are crispy.
