Ingredients

  • 1 cup dried pitted fruit, cut fine
  • 1/3 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon grated lemon rind
  • 1 cup sifted enriched all-purpose flour
  • 1 cup brown sugar, lightly packed
  • 1/2 teaspoon salt
  • 8 tablespoons butter or margarine
  • 1 1/2 cups quick oatmeal
  • 3 tablespoons milk

Directions

Preheat oven to 350 degrees F.

Cook fruit, sugar, and water until thick. Add lemon juice and rind. Cool.

Mix flour, brown sugar, and salt. Cut in shortening until mixture resembles meal(at least 1 full minute in food processor). Add oatmeal and mix well. Add milk and blend.

Pack half of dough into greased 8-inch-square pan. Spread fruit mixture on top. Spread remaining flour mixture over fruit.

Bake 40 minutes. Cool. Cut in bars.


Makes about 2 dozen 1-by-2-inch bars.
