• 1/4 cup plus 1 tbsp tahini
  • 1 19oz can chick peas(garbanzo beans)
  • juice of one lemon
  • 2 1/2 tbsp olive oil
  • 2 1/2 tbsp warm water
  • 3 cloves garlic
  • 1/2 tsp salt
  • freshly ground pepper
  • 1/2 tsp ground cumin


Put everything in the food processor. Whirl to blend thoroughly, scraping sides of bowl as needed. Taste and add more lemon juice or salt or pepper or cumin if you think it needs it. Serve with vegetables and/or pita bread.

Makes 2 cups.
