Ingredients

  • 4 cups chicken stock
  • 1 cup cooked Chicken, chopped
  • 1/2 cup carrots, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • Dumplings
  • 1 cup unbleached flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1/3 cup milk

Directions

Prepare soup by adding vegetables and chicken to broth in a large saucepan. Bring to a boil then simmer for 15 minutes. Sift the flour, baking powder and salt into a bowl. Mix together the egg and milk and add to the dry ingredients. Stir until blended. Drop tablespoons of the dough into the soup, dipping spoon into stock first. Cover tightly and steam for 10 minutes. Test with a toothpick for doneness, if it comes out clean the dumplings are done.


Yield: 4 servings.
