• 2 lb(1 kg)leg lamb, 1 inch(2 1/2 cm) cubes
  • 1 cup buttermilk(skim milk or yogurt will do)
  • Freshly ground black pepper
  • Thyme
  • 8 large mushroom caps
  • 2 zucchini, sliced
  • 2 tablespoons oil
  • Salt
  • 1 green pepper, cut into squares
  • 12 cherry tomatoes(or chopped large tomatoes)
  • 8 small onions


1. Mix buttermilk, pepper and thyme in a large bowl and marinate the meat for at least 2 hours at room temperature, turning a number of times.

2. Place the oil and salt in another bowl and marinate the mushroom caps and sliced zucchini turning so that they are well coated with the seasoned oil.

3. Drain the meat and alternately place the meat and vegetables on skewers. Broil under a hot preheated broiler until the meat is well browned and sizzling.

Serves 4-6.
