Ingredients

  • 1 9 inch baked pie crust
  • 1/2 cup cornstarch
  • 1/2 cup sugar
  • 2 cups milk
  • 1 egg
  • 1 egg yolk
  • 2 Tablespoons butter
  • 1 teaspoon vanilla
  • 4 oz. macadamia nuts, chopped (3/4 cup)
  • 1 cup whipping cream
  • 2 Tablespoons sugar

Directions

1. Make pie crust

2. Mix cornstarch and 1/2 cup sugar in top of a double boiler. Stir in milk gradually. Cook stirring constantly over simmering water until very thick 10 to 12 minutes. Beat egg and egg yolk in small bowl. Whisk a small amount of the milk mixture into the eggs then whisk egg mixture into remaining milk mixture. Cool stirring constantly over simmering water 3 minutes. Remove from heat. Stir in butter & vanilla. Refrigerate covered stirring occasionally until cold, about 3 hours.

3. Reserve 2 Tablespoons of the chopped nuts. Stir in remaining nuts, pour into shell. Beat cream and 2 tablespoons sugar in chilled bowl. Use pastry bag with big star tip to decorate, make border, sprinkle with rest of nuts.

This is really a great pie and always a hit.
