Ingredients

  • 1cup dark brown sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1/2 cup chopped nuts
  • 1/2 cup chopped dates
  • 1/2 cup raisins
  • 2 cups peeled cubed tomatoes
  • 3 cups sifted flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp nutmeg
  • 1/2 tsp salt

Directions

Cream sugar and shortening. Add eggs, nuts, dates, raisins, and tomatoe mixture. Pour into greased and floured 9x13 inch pan. Bake at 350 deg. for 30 to 35 minutes. Beat with electric mixer until smooth 8 oz. cream cheese, 1 1/2 cups confectioner's sugar, 3 tablespoons butter, tsp vanilla, pinch of salt. Frost when cake is cool.
