Note: This can be adapted in many ways; make a taco pie, after cheese melts, add shredded lettuce, tomatoes, top with sour cream, sliced black olives, and your favorite taco sauce. Brown ground beef (Using your favorite seasoning), with onion, drain add 1 can cream of mushroom soup use instead of chili. Or use half ground pork sausage with beef. Left-over bar-b-que pork, chicken or beef is also good. Italian sausage, mushrooms, onions, green pepper, sun dried tomatoes, & mozzarella cheese also work well- you can even use a pre-made baked pie crust instead of corn chips. Possibilities are endless, use your imagination!

Ingredients

  • chili- canned or homemade
  • corn chips - regular preferred but may use king size
  • grated cheddar cheese
  • jalapeno peppers (optional)

Directions

In casserole dish, break up corn chips into small pieces, but do not crush completely, (any foil pan works well). Pour heated chili over corn chips, top with grated cheese and sliced peppers. Place in 350 degree oven until cheese melts & serve.
