These poppers are favorites with my friends. Enjoy!
- 6-12 jalapenos, split lengthwise and seeded*
- 1/2 cup low or non-fat cream cheese (soft)
- 1/4 cup (or so)low or no-cholesterol egg ""product""
- 1/4 cup shredded low or no-fat cheddar cheese
- salt & pepper
- dried bread crumbs
Mix together cream cheese and cheddar cheese, add salt & pepper to taste (you don't need much). Stuff halved and seeded peppers with a teapoon of cheese mixture. Coat stuffed jalapenos in egg "product" and roll in bread crumbs. Place jalapenos on baking sheet and bake at 300 degrees F. for 20 minutes. Serve warm.
