Ingredients

  • 2 cups sweet potatoes(cooked and mashed)
  • 1 cup sugar
  • 2 eggs, beaten
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1/3 cup buttermilk
  • 1/4 teaspoon soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 teaspoons vanilla
  • 1(9-inch) pastry shell(unbaked)
  • 1(8 oz.) carton Cool Whip
  • 3/4 teaspoon cream of tartar

Directions

Combine sweet potatoes, sugar, eggs, butter, flour and salt. Blend on high speed with mixer until creamy. Combine buttermilk and soda. Add spices and vanilla. Blend thoroughly. Pour into unbaked pastry shell.

Bake at 350 degrees F. for 1 hour and 10 minutes or until firm.

Stir cream of tartar into Cool Whip. (Do not beat.) Top thoroughly cooled pie with mixture. (Topping will remain firm.)
