Ingredients

  • 3 lbs. chicken pieces
  • 2-3 tbsp flour, seasoned w/salt & pepper
  • 6 tbsp butter
  • 1 lb. frozen spinach
  • 1 tbsp flour
  • 3-4 tbsp light cream
  • 1.8 tsp paprika
  • 4-5 tbsp grated Parmesan cheese
  • 3 tbsp corn flake or bread crumbs

Directions

Roll chicken in seasoned flour. Melt 3 tbsp butter in large frying pan. Add chicken and cook till browned, about 10 min.

Preheat oven to 400. Cook frozen spinach following directions on pkg. Add 2 tbsp butter and toss till melted. Sprinkle in flour. Bring spinach to boil, then add cream andpaprika. Sppon spinach mix into buttered, ovenproof dish. Arrange chicken on top. Mix cheese and cornflake or bread crumbs together. Sprinkle thickly on top of chicken. Melt remaining butter and dribble on top.

Bake for 25-30 min. or till topping is crisp and brown.
