Ingredients

  • 8 oz been thread noodles
  • 1 red bell pepper, julienned
  • 1 cup julienned carrots (1 large)
  • 1/2 cup lime or lemon juice
  • 1/4 cup soy sauce
  • 1/4 cup sugar
  • 1/2 cup dry-roasted peanuts
  • 1 inch piece ginger root, peeled and sliced
  • 1 - 2 chili peppers (any variety)
  • 1/2 cup cilantro leaves

Directions

Bring pot of water to boil. Remove from heat, add noodles, pepper and carrots. Let stand until noodles are tender, about 10 minutes. Drain, and transfer to a bowl to cool.

Place lime/lemon juice, soy sauce and sugar in a bowl, whisk until sugar has dissolved.

In food processor, combine peanuts, ginger, chilies and most of the cilantro; pulse until finely chopped. Add peanut mixture to noodles and toss to mix. Add sugar mixture and toss again. Garnish with remaining cilantro leaves.
