• 1 tbsp pickling spices
  • 1/3 c. water
  • 1/3 c. cider vinegar
  • 3/4 tsp salt
  • 1 c. chopped green pepper
  • 1/4 tsp black pepper
  • 1 c. chopped ripe tomatoes
  • 2 c. thinly sliced Vidalia Onions


Tie the pickling spices in cheesecloth. In med. saucepan, heat spice bag and remaining ingredients except the onions. Bring to boil. Reduce heat to med, add onions and cook add'l 5 minutes. Remove spice bag. Place in bowl, cover and refrigerate. (This recipe can be doubled several times over and make a larger quantity. Place in clean sterilized jars, cover tightly and refrigerate. Keeps for months. Great on hamburgers.)
