Ingredients
- 2 tbsp butter
- 2 tbsp olive oil
- 4 chicken breasts, skinless, boneless
- 1 onion, diced
- 3 tbsp curry powder
- 1/2 cup chicken stock
- 1 cup evaporated skim milk
- 1 tbsp lime juice
Directions
In large skillet, heat butter & oil. Add chicken, saute til golden & cooked thru. Remove chicken; set aside. Over medium heat, add onion to same pan & saute til soft. Add curry powder & stir. Add chicken broth & simmer 2-3 min. Add milk, scallions, lime juice, salt & pepper. Return chicken to pan & coat well. For the rice, bring water to a boil and add the rice. Cover and simmer for 15-20 minutes. Fluff with fork and toss with parsley. Serve chicken over rice. *I used regular rice.
