Ingredients

  • 1 package(10 oz.)frozen chopped spinach
  • 4 eggs
  • 2 slices fresh white bread, crusts removed
  • 2 cups shredded Cheddar cheese(about 8 oz.)
  • Salt and black pepper, to taste
  • Dairy sour cream, for garnish(optional)

Directions

Cook spinach according to package directions. Let cool, then drain, pressing out as much moisture as posible.

In a medium mixing bowl with an electric mixer, beat eggs until color of lemons. Tear bread into small pieces. Fold cheese, spinach and bread into eggs. Season with salt and pepper. Spoon mixture into a well-greased 8-inch pan.

Bake in a preheated 350 degree F. oven 30 minutes, or until knife inserted in center comes out clean. Cut into wedges. Serve hot or cold with a dollop of sour cream, if desired.


Makes 8 to 16 wedges
