Ingredients
- 5 cups ground cucumber
- 3 cups ground onion
- 3 cups celery, finely chopped
- 2 hot red peppers, ground
- 3 sweet red or green peppers, ground
- 3/4 cup salt
- 1 1/2 quarts water
- 1 quart white vinegar
- 3 cups sugar
- 2 teaspoons mustard seed
- 2 tablespoons celery seed
Directions
Combine all vegetables. Add salt and water. Let stand overnight. Drain. Heat vinegar, sugar, mustard seed and celery seed to boiling. Add the drained vegetables and return to a boil. Cook, uncovered, over low heat about 10 minutes. Pour into hot, sterilized jars and seal immediately.
Yield: About 8 pints.
