Ingredients

  • 3 slices of bacon, cut into thirds
  • 1 1/4 cups rice
  • 1 pkg. onion soup mix
  • 1 can(10 3/4 oz.)condensed cream of mushroom soup
  • 1 chicken(3 lbs.)cut up
  • Salt and freshly ground pepper
  • 1/4 lb. mushrooms, sliced
  • 2 tablespoons chopped pimientos

Directions

1. Preheat oven to 350 degrees F. Arrange bacon pieces on bottom of a 23x9x2-inch baking dish.Sprinkle rice over bacon.

2. In a medium-size bowl, combine onion soup mix, mushroom soup, and 1 1/2 cups water. Mix well. Pour one third soup mixture over rice.

3. Arrange chicken pieces in dish on top of soup and rice mixture. Sprinkle with salt and pepper. Scatter mushrooms around chicken pieces. Pour remaining soup mixture over chicken. Top with pimientos.

4. Cover with foil. Bake 1 hour 15 minutes, until chicken is tender and rice is cooked.
