• 3/4 cup real maple syrup
  • 4 egg yolks well beaten
  • 2 cups whipped cream


Heat the syrup on top of a double boiler. Add a little syrup to the yolks and then stir the yolks into the syrup. Cook stirring constantly until it is thickened. Remove from stove and cool completely. Whip the cream firmly. Fold the syrup mixture into the whipped cream. Spoon in 6 glasses or cups. Serve chilled.
