Ingredients

  • 1/2 bag of a 26 oz. size Orida Homestyle Hashbrowns; thawed
  • 1/2 roll (1 lb size) breakfast sausage (such as Owen's or Jimmy Dean)
  • 6 eggs
  • 1/2 cup milk
  • 1/2 cup chopped onion
  • 1/2 cup chopped bellpepper
  • 1 cup shredded cheddar cheese

Directions

Brown sausage, onions and bellpepper.

Place thawed potatoes in a lightly greased 2 qt. casserole.

Layer sausage mixture over potatoes.

Beat eggs (season to taste) with milk, then pour over sausage mixture.

Sprikle with cheese.

Bake immediatley at 350 d. for 30 minutes or cover and freeze (for a few days) or refrigerate overnight. Add approx. 5 to 10 minutes to baking time if frozen.
